TAGLIATELLE GAMBERI, POMODORINI E MENTA FRESCA

(TAGLIATELLE PRAWNS, TOMATOES, AND FRESH MINT)

INGREDIENTS

400g good quality egg tagliatelle

300g peeled king prawns tails

250g cherry tomatoes, cut in half

4tbs of extra virgin olive oil

2 cloves of crushed garlic

1 small red chilli, chopped (optional)

40ml dry white wine

20 fresh mint leaves

METHOD:

Heat 4tbs of extra virgin olive oil in a pan on a medium heat. After 30 seconds add the crushed garlic, red chilli, and prawns. Season with salt and pepper to taste. Simmer for 1 minute before adding the white wine. Keep the pan on the heat, once the wine has evaporated, add the cherry tomatoes and gently toss for 1 minute.

Cook your tagliatelle in a large pan in salted boiling water according to the packet instructions. Once the tagliatelle is ready drain it in a colander and toss the tagliatelle with the prawn and tomato sauce. Add the fresh mint leaves and stir well until the ingredients are all combined.
